Guallar’s Teruel delicacies are a true expression of fine gourmet craftsmanship. Proud of our origins, we use only prime cuts of PGI Teruel pork, PDO Bajo Aragón extra virgin olive oil, and raw milk from free-range grazing goats and sheep.

TASTING NOTES

ASPECTO
Longaniza de Aragón: Pale purple to light red tones, fine texture and evenly distributed white fat. Natural casing, well adhered and dry, with a distinctly artisanal look. Cured Chorizo: Deep, dark red with ivory fat marbling. Compact slice with a medium grain.
AROMA
Longaniza de Aragón: Clean cured-meat notes, black pepper and a gentle hint of aniseed. Evokes the character of traditional cellars and natural curing rooms. Cured Chorizo: Sweet paprika, toasted bread and smooth Sherry wine. Notes of clean curing and rounded spices.
TEXTURA
Longaniza de Aragón: Firm and compact, with a dry yet pleasant bite. Becomes more supple as it warms. High-quality lean meat and pork fat are clearly perceptible. Cured Chorizo: Firm, with initial resistance and a gradual melt. Well-cured fat adds a rich, unctuous texture. High-quality lean meat stands out.
SABOR
Longaniza de Aragón: Delicate and elegant: cured pork, pepper and a touch of aniseed. Long finish, subtly sweet, with pronounced umami and a clean mouthfeel. Cured Chorizo: Balanced and approachable: sweet paprika, pork and a toasted touch. Long, umami finish with a cellar-like echo. A gentle, progressive heat only in the spicy version.
