Guallar’s Teruel delicacies are a true expression of fine gourmet craftsmanship. Proud of our origins, we use only prime cuts of PGI Teruel pork, PDO Bajo Aragón extra virgin olive oil, and raw milk from free-range grazing goats and sheep.
TASTING NOTES
ASPECTO
Ruby to cherry-red in the main muscle, graduating to paler pink tones toward the outer areas. White to ivory fat, fine and glossy, with delicate marbling and light curing crystals that create a silky appearance.
AROMA
Clean, lingering aroma of natural curing. Notes of cellar, nuts, toasted bread and a hint of dried herbs. A subtly sweet, milky background with a nuance of noble fat.
TEXTURA
Firm yet juicy bite, with a fine grain. The fat melts easily as it warms, adding smoothness and roundness without feeling heavy. In more cured areas, the texture becomes firmer and drier, while always remaining balanced.
SABOR
Elegant, harmonious flavour: precise salinity, a subtle sweetness and nutty notes. Medium-long persistence with pronounced umami, a toasted aftertaste and clean curing character. Smooth finish with a delicate, very pleasant richness.
